    • Hi! Thanks for comment. Here's the recipe: - 1 egg white - 1 pinch of salt - 1 middle-size lemon (juice and zest) - 100 gr white sugar - 200-250 gr ground almond Preheat oven to 150ºC. Beat the egg white with the salt and 1 teaspoon of the lemon juice until stiff glossy peaks. Fold in the sugar and add the rest of the lemon (juice and zest). Mix in 200 gr of almond and combine well. If it's too wet, add more almond as needed to make the dough come together without being sticky, neither too dry. Take little portions of dough using a teaspoon and make tiny balls with your hands. Put them onto parchment lined baking sheet and bake for approximately between 15-25 minutes, until they're golden and firm to touch. Let rest for a few minutes, then transfer to a wire rack to cool. Brush them with a simply lemon icing (powderer sugar + lemon juice until thick).
